Gluten Free Oat Pancakes with Greens & Ghee
It’s a special morning when we eat pancakes or waffles for breakfast. Covered with ghee, fresh fruit, whole milk plain yogurt, and just a drizzle of maple syrup, pancakes promise possibility while they bring comfort and familiarity. These delightfully green pancakes come together quickly in the blender and fry up crispy around the edges and soft in the middle, which is just what I like in a pancake.
Oat Pancakes with Greens & Ghee
1 1/2 cups oat flour
1 cup milk, yogurt, or kefir
2 eggs
2 cups greens (I used a combo of kale + spinach)
1 tsp sea salt
1 tsp baking powder
1 tsp apple cider vinegar
1 tbsp chia seeds
Method
Blend everything together and fry in butter or ghee in a cast iron skillet. Serve with more ghee or butter, seasonal fruit, yogurt, and a drizzle of maple syrup, these are pancakes, after all.
